In the good old days when a pound was a pound, puddings were sold in 1lb and 2lb sizes.
A 1lb pudding will serve 4 and a 2lb pudding 8 (or 6 gourmands).
As a result of Europe stirring our pot, we are forced to sell our puddings as Small and Large. (This is a compromise on our part, wishing to promote continental harmony). A small pudding is 454gr and the large is 900gr. These are minimum weights.
Our puddings are hand made with a little help from a 20 qt Hobart mixer and steamed for 6-8 hours at atmospheric pressure. We start in September and steam the last batch in the last week of November.
Due to the high proportion of fruit and the total absence of preservative, we recommend that the pudding should be treated as a fresh product with a long life. If the pudding is to be kept from year to year it is best to freeze it.
Stuffing our pudding to the back of the larder along with that opened half-box of strange twiglike nibbles that came free with Gardeners Kitchen magazine is prohibited.
